Carnitas

Easy. Delicious. Slow cooker.

Some of my favorite words.

This recipe is so easy, there’s no reason you can’t have tacos every Tuesday.

Here’s whatcha need:

5 lbs or so pork shoulder/butt
1 small white onion, sliced
2 tbsp olive oil
2 tsp oregano
3 cloves garlic, chopped
2 tsp cumin
1/4 cup lime juice or orange juice
1 tsp paprika
1/2 tsp red pepper (optional)

Rinse and dry the pork. Cut off any extra fat (excluding the fat cap). Mix all the spices together. Rub pork with oil and then the seasoning mix. Place pork in slow cooker with fat cap up. Pour lime juice over pork. Cover and cook for 6-7 hours on high. Internal temperature should be about 170 degrees. Shred it while it’s hot.

Carnitas are great with everything…over tostones, with some rice and beans, with tacos, with an egg and potatoes for breakfast, stuffed in a sweet potato…the possibilities are endless!
