Pumpkin Blueberry Baked Oatmeal

There’s just something so amazing about a bowl of warm pumpkin blueberry goodness. This dish is easy, and I bet you have most of the ingredients in your cupboard already. Cook this and eat it the entire week!

1 ½ cups rolled oats
½ cup pumpkin
1 ½ tsp pumpkin pie spice
1 cups walnuts, chopped
2 ripe bananas
½  cup blueberries
4 tablespoons coconut oil, melted
2 tablespoons chia seeds
¼ tsp salt
2 cups almond milk
2 tbsp honey
1 tsp vanilla

Preheat oven to 350. Stir chia seeds in small bowl with 4 tablespoons of water. set aside for 5 minutes. In a bowl, combine oats, pumpkin spice, ½ cup walnuts, and salt in a bowl. In separate bowl, whisk honey, milk, coconut oil, pumpkin and vanilla in a bowl. Add chia seeds.
Slice banana and lay out on greased 8 ½ x 11 baking dish. Add half the blueberries on top. Then spread dry mixture over. Pour milk mixture on top. sprinkle remaining blueberries and walnuts on top. Bake for 35-40 minutes.
