Picadillo….a traditional Puerto Rican dish consisting of meat, potatoes, and veggies. Can’t go wrong with that!
It’s pretty quick, easy, and tasty. Traditionally, it’s served over white rice, but to make this meal Whole30 compliant, we served it over cauliflower rice.
Here’s what you need:
1 pound ground beef
1/2 white onion, chopped
2 big spoonfuls of sofrito
2 cloves garlic, chopped
1 russet potatoes, peeled and chopped
1 small can tomato sauce
2 big spoonfuls Adobo
5-7 pitted green olives, chopped into smaller pieces
1 carrot, peeled and diced
Brown the ground beef with the onions until meat is cooked through. Stir in sofrito and cook for a minute. Add the rest of the ingredients and stir well. Bring to a boil, then reduce the heat and cover. Simmer until carrots and potatoes are cooked through. And that’s it! Really!
Serve over your preference of rice and with tostones!
