Any one sick of eggs out there??
We’ve been eating eggs every morning for months, and I needed a break!
I’m all about easy, and this breakfast (or snack or lunch!) comes together in about 5 minutes in the morning.
Here’s what you need for a single serving:
1 medium sweet potato, washed
2 tablespoons nut butter (I’ve used almond butter)
1 tablespoon chia seeds
1 medium ripe banana
1/4 sliced almonds (or any chopped nut you choose)
Wrap sweet potato in foil and place in a slow cooker. Cook on low for 6-7 hours or high 3-4 hours (I like doing it overnight!).
When done, unwrap sweet potato and slice it lengthwise to open it up. Top it with nut butter, chia seeds, banana, and almonds. And that’s it!!
I like to put 5 or so sweet potatoes in the slow cooker to have ready for the entire week. When the potatoes cool, store in the refrigerator.
